Our Commitment to the Crabs We Serve at Mikuni Inkyojo
Echizen-gani, or Echizen snow crab, is one of Fukui’s most celebrated winter delicacies.
Authentic Echizen-gani bears a yellow tag certifying details such as its fishing port and vessel. However, even among crabs carrying the same yellow tag, quality can vary significantly from one crab to another—in the fullness and texture of the meat, the condition of the crab miso, and other characteristics.
At Mikuni Inkyojo, being an authentic Echizen-gani alone is not enough to meet our purchasing standards.
We carefully assess each individual crab and select them according to our own quality criteria. Among these, we designate only those of exceptional quality—particularly in the fullness and texture of the meat—as our highest grade, “Special A Grade.”
We also do not serve Mizugani, soft-shelled male snow crabs that have recently molted, as their meat content and overall quality can vary considerably from one crab to another.
What matters to us is not simply whether a crab bears the yellow tag, but the quality of the individual crab beyond that certification.
For us, the yellow tag is not the end of the selection process. It is where the selection begins.
Guests travel all the way to Fukui and Mikuni looking forward to experiencing Echizen-gani. We therefore want every crab we serve to live up to that expectation.
At Mikuni Inkyojo, we will continue to uphold our commitment to the quality of Mikuni Port Echizen-gani, carefully selecting each individual crab before serving it to our guests.
